1 kg beef (not too lean) or chicken mince
1 brown onion
1 carrot
1 egg
80 g (1 cup) fresh breadcrumbs
2 cloves garlic
tomato sauce (ketchup)
Worcestershire sauce
½ bunch continental parsley, chopped
60 g (⅓ cup) brown sugar

1 solid iceberg lettuce
1 bunch chives
1 firm ripe avocado

DRESSING (you will need a jar or squeezy bottle)
2/3 cup extra virgin olive oil
1/3 cup red wine vinegar
1 tablespoon dijon mustard
1 teaspoon salt
1/4 teaspoon ground black pepper
