Did you know that Wisconsin has long been known as “America’s Dairyland”? For decades, this mega milk and cheese producing state has led the country’s dairy industry. In this class we will briefly examine Wisconsin’s history and the reasons behind its claim to dairy fame, but our focus will mainly be on what today’s cheesy landscape looks like among small producers and how they’re changing the industry.
